Back from Vacation in Idaho!

I am back from my vacation, sadly. I am working too many hours to make up for the lost time but that is the cost of a taste of freedom I suppose. The good news is that the demo on my house has begun. I hope to see the place come together quickly. It should be a lot of fun.

Re-cap of my trip!

Day 1:

Flew into Salt Lake City. Had lunch at Vertical Diner. Jamie and I were very surprised at how great the place was. I had fried chicken and potatoes with a mint chocolate shake, Jamie had a fajita type thing and a smoothie. We shared a banana split.

Then it was off to the health food store to get some supplies.

From there, we drove north toward Bear Lake. The first stop was on the side of the road. We spotted a small cave with bubbling blue water. I am not sure it there was an aquifer there but it was very cool regardless. I tried to get in it but it was far to cold and almost hurt my feet.
Once we got to Bear Lake we took some pictures on an overlook. Bear Lake was huge and tucked into the mountains. There was a lot of nice sights while driving by the lake.


The drive toward Jackson Hole Wyoming was very nice. It actually was one of my favorite drives during the entire trip. There were so many old barns and whatnot that were rotting in fields. Great stuff. It is nice to know that the earth might re-claim the destruction we have created at after we are gone.
We camped out under the mountains about 20 miles outside Jackson Hole that night. It had been several years since I camped out like this. It was a nice experience and we even saw a cute wild bunny as we were driving to the site.
Day 2:

In the morning we went and toured Jackson Hole and even went to their annual arts festival. There were local artist and artists from afar. It was a good time. After, we headed into the Grand Tetons National Park. This place was amazing! Huge mountains. We took a boat ride across Jenny Lake and hiked up a steep mountain to Inspiration Point. This was a great few of the Teton area. This day stands out in my mind as one of the best days. The mountains were amazing. They were so much bigger then the Applications here on the east coast. That night was another camping in the mountains night.


Day 3:

Yellowstone. We saw some wildlife! Let's see, a baby bear, baby bison, adult bison, deer, elk, so much! Jamie loves her wildlife. She was worried when I went chasing after the bear to get a good picture though. We saw Old Faithful erupt, numerous hot springs, some great waterfalls, and mammoth hot springs (they looked like ice). We popped our heads into Montana for a second just to see the gate into Yellowstone. We camped in Yellowstone that night.



Day 4:

We left Yellowstone with a slight car crisis averted. We saw "Montana the Gopher" sitting on a guardrail greeting everyone. It made a funny start for a slow down type day. We went to see Mesa Falls in Idaho. The upper falls were amazing but the lower falls were a major let down. They were to far away and seemed overgrown. We got to see a double rainbow at the Upper Falls and that more then made up for it.


We headed toward Idaho Falls for the evening when we saw a sign for a place called Cave Falls. We decided to check it out. After an hour drive down a shady dirt road we ended up back in Yellowstone and were pleasantly surprised by a great waterfall. It was not a high fall but it was very long. We got to climb right to the base of the falls which was nice. We climbed out onto the rocks in front of the falls and were cooled by the mist. It was worth the drive. We stayed in Idaho Falls that night. A bad experience at a thai place was something not to be remembered. There were a ton of ducks that lived outside of the hotel we stayed in and that was kind of cool.Day 5:

We drove to central Idaho and stopped at Craters of the Moon. This place was awesome! We got to crawl around in lava created caves under the burning hot desert heat. This place was so desolate and yet flourished with wild flowers. This was one of my favorite stops on our trip. Climbing around in caves with no lights was dangerous but more fun then I had hoped for!

After we left, we drove to Stanley Idaho, in the sawtooth mountian range. We camped at the trail head.

Day 6:

Into the Sawtooth Wildreness we go! This was a 6 mile hike, the last third was all up a steep mountian side. It was a very strenous hike but when we finally got to sawtooth lake, it was all worth it...except for seeing that snake of the trail. We were at the top of the montains and there was snow everywhere.

After hiking back out we drove on to Boise. A very nice scenic drive. Boise sucked. We found a decent Indian place for dinner but there was not much else to be offered.

Day 7:

Breakfast at the Dream Cafe in Boise was horrid. Then it was up to Horseshoe Bend for a day of white water rafting! I had never been and it was a ton of fun. Jamie and I even jumped out and swam for a bit. Good stuff. Sadly, we forgot out underwater camera so there are no pictures. After, it was down to Twin Falls. This was a nice drive through the Idaho dessert as well. We got to Twin Falls as the sun was setting and got some nice pictures.
Day 8:

We went to see several falls that were in the area. They were all a let down due to the city of Twin Falls plugging them up with power plants. Unreal. Very disappointing. We headed north to Shoshone Ice Cave. We were pumped but again, it was a tourist trap and a major let down. Not all was lost however, we found a great roadside treasure in Idaho Mammoth Cave. After several minutes down a dirt road in the desert, we came to some old home. Inside we rented lanterns and hiked through a huge and amazing cave on his property. It was a lot of fun and was the highlight of the day, by far. We also saw 3 guys base jump off a bridge. That night we drove back to Salt Lake City.
Day 9:

Day 9 was breakfast at Sage's Cafe. It was nice, run by the same people who ran the Vertical Diner. I had french toast and Jamie had blueberry flapjacks and a soy latte.

From there we went to the zoo and had a nice day with the skunkies and a sloth! I like sloths. After the zoo, we could not resist going back to the Vertical Diner. Jamie had nachos and I had a fried chicken sandwich.

Then we went out to see the Great Salt Lake. It was disgusting. Flies everywhere, lava mud sand, just nasty. It was entertaining and a "check it off the list" type of thing never the less.


Then we went back to our hotel and swam in the pool to get the feeling of bugs off us. We turned in early for a long day of flying back to Atlanta. Sad but true. I wish I was still in the mountains.

Good Friends, Good Houses, and Idaho

Some of my old friends came into town this weekend. It was nice to see some old faces, sharing stories and laughs. It was an enjoyable time and I hate to see them head out tomorrow morning.

It has been an eventful week. I had a very nice discussion with my Realtor about investing in some properties. He shared much of his knowledge with me and I have a lot to consider. I think I will at least start working on getting a real estate license. There is no harm in it. From there, we will see where it ends up.

Work should begin on the house later this week....I hope. It is a frustrating process but I am still enjoying it. I went to the house on Sat and was relieved that everything is still looking good and is intact. I also met the neighbor! That feels so weird to say. He is a nice guy and I hope he lets me swim in his pool.

Sat is Idaho! I am pumped! I can not wait for all the great sites I will see. Jamie and I made car rental reservations today and looked at what out first few days there might be. I am going to take a ton of pictures and hope I get the motivation to share them. Jamie is bringing her laptop (i think) and I may be able to make a post of two while we are out. If anyone knows where we can eat, please say so!

Oh...I made fried rice on Friday.

Chocolate Banana Pecan Cake

Today I got my hair cut. I have not paid for a hair cut in years. It was an interesting experience. I think it looks good. Nice and short.

I may go kayaking later this week. I think it will be a good time. I have never been before. I hope hoping that Jamie and I will get to do some white water rafting when we are in Idaho. We leave in 12 days! Expect many pictures when we get back.

I made a great cake yesterday. It was very moist with a nice hint of banana nut bread flavor. Yum!

Chocolate Banana Pecan Cake

2 1/4 cups of flour
1 1/4 cup of sugar
1 cup of soy milk
2 bananas (over ripened)
3/4 cup of coco powder
1/2 cup of crushed pecans
1 tablespoon of maple syrup
1/2 tablespoon of apple cider vinegar
1 teaspoon of almond extract
1 teaspoon of cloves
1 teaspoon of cinnamon

Pre-heat your oven to 350 degrees. Grease and flour 2 round 9 inch cake pans.

In a large mixing bowl, mash 2 ripened bananas. Once they are well mashed, add the flour, coco powder, and sugar. Mix well. Add the soy milk and stir. The mixture should be moist and slightly thick. Then add all other ingredients. The vinegar will cause a slight reaction with the soy milk, smelling almost sour. No worries, that is what you want. Pour into the cake pans evenly and bake for 35-40 mins or until fully cooked. Test with a toothpick in the middle. Let cook, frost however you like and enjoy!

Red Quinua with Mushrooms and Zucchini

It has been a stress filled week. Lots of major life changes going on all at once. To cope, I made food!

Red Quinua with Mushroom and Zucchini

1 cup of water
1/2 cup of red quinua
1 large portabello mushroom cap
1 small zucchini
2 cloves of garlic
2 tablespoon of water
1 tablespoon of red wine vinegar
1 tablespoon of chopped onion
1 tablespoon of navy beans
1 tablespoon of oil
1 teaspoon of pine nuts
1 teaspoon of lemon juice
1 teaspoon of ground pepper

In a pot, bring 1 cup of water to a boil and add the red quinua. Cook on med heat until the quinua is soft and water is absorbed, about 20 mins. Set aside.

In a saute pan, heat the oil. Add the garlic, and onion, chopped. Once the onion becomes slightly translucent, add in the mushroom (sliced lengthwise) and zucchini (sliced circular). Cook until mushrooms are soft, about 5 mins. Add the ground pepper and pine nuts. Cook for about 5 more minutes then all the beans, tablespoon of water, lemon juice, and vinegar. Turn the heat put and let stif vigorously for 3 minutes. Add the red quinua mixture and mix well. Take off the heat and either serve hot or chill and serve.


This was very tasty and made up on the fly. You could do a numver of things with it, feel free to add peas, corn, or even spinach. The mushrooms took this dish to the next level. They were ver good with the vinegar and lemon flavor with a bit of heat from the pepper and garlic.


Yesterday, we made some potato salad and "honey" mustard tofu. The it was a great meal. Very refreshing. This was after I got bit in the butt by a donkey. No joke. I was at a game ranch and playing with donkeys. I was feeding them and when I turned around to see a goat sitting on a bench, one of the donkeys bit my ass! Unreal. It did not break the skin but hurt. I still could not help laughing though. It was a good weekend.

Coconut Rice with Tempeh


Coconut Rice with Tempeh

1 package of Tempeh
1 can on coconut milk
2 cloves of garlic
1 carrot
1 1/3 cup of water
1 cup of white rice
1 cup of cauliflower
1/3 cup of peas (fresh or frozen)
2 tablespoons of oil
2 teaspoons of lemon juice
1 tablespoon of sugar
1 teaspoon of salt
1 teaspoon of curry powder
1 teaspoon of turmeric

In a pot, add rice, 1 cup of coconut milk, water, 1/2 tablespoon of sugar, salt, and the curry powder. Bring to a boil as if cooking normal rice. When the rice is soft (about 20 mins) remove from the heat and add 1/2 tablespoon more coconut milk and stir well. Place the cover back on the pot and let steam while making the remaining food. In a saute pan, heat the oil on med heat. When the oil is hot, add the tempeh that is cut into 1 inch block chunks. Fry each side until golden brown then remove from the oil and set on a side plate. In the remaining oil, fry the garlic, carrots, and cauliflower until the carrots are slightly soft. Once the carrots are done, add the remaining coconut milk, and all other ingredents. Bring to a simmer for 5 minutes. Add the tempeh back in and stir gently until all tempeh is coated in the cocnut mixture. Serve hot with the rice under of on the side.


Today I went out to the house with a vendor and got a quote for having some trees removed. I have spoken to a few people about roommate potential when the house is finished. I hope that it all works out. This is a big step.

The NBA draft is on tonight! I have been looking forward to this for a few weeks now. It should be a lot of fun.

Whose Life?

I was remodeling this blog the other day when I realized that I had not taken the time to introduce myself to the followers who do not know me personally. Let me borrow your time, briefly.


I grew up in Maine, until I was about 19 years old. I got into punk and hardcore at an early age (my 1st show was on my 11th birthday) and never looked back. Playing in bands and learning the ideals and rage from this culture really set the tone for my life. Protests, touring, record labels, all ensued. I was extremely active within the community. At the age of 18 I decided to become vegan, in fact, I will be vegan for 11 years next week. When I turned 19, I left Maine, cleansing myself of my comforts. My life-long friend helped me throw away the muppet-hide couch and everything else I owned. I was on a bus to Tulsa OK, where I spent Christmas, alone in a friends apartment while he was with family. From then, the tale gets long as I traveled for numerous months, finally landing in Amherst Mass.


Eventually I fell away from the music of punk but retain much of the culture. Now it is mainly socially relevant hip-hop and some post-punk stuff. Don't get my wrong, I still wail out to some hardcore now and again.


Two years later, I had lived in 6 different states all over the country. It was a hectic time that led me through Indiana, Colorado, Oregon, Maine, Michigan, New Mexico, and Massachusetts. Lots of apartments and too much moving. After a year in Maine with my family I headed to Geogria. I have been here since 2004 and today... I BOUGHT A HOUSE!

My life has been full of changes but there have been many constants as well. It has brought me to where I am now and I see many more changes on the horizon.

Even more Cheesecake!

It has been a hectic week. It appears that the closing for my house is next Friday at 11:00am. It has been a long road but it looks like this part is coming to a close. Throughout the process, the Real Estate piece has been extremely interesting to me and more fun then I thought it would be. I may look into getting more involved. We will see.

Food this week has been modest at best. More quick meals and even some going out to eat. However, I have made a few nice desserts. I made another cheesecake. This time I used a number of berries that we had at the house and it turned out amazing!

Berry Cheesecake

1 graham cracker crust (store bought or homemade)
2 1/2 tubs of Tofutti Cream Cheese
1 cup of water
3/4 cup of brown sugar
1/2 cup of sugar
1/3 of a cup of blueberries
1/3 of a cup of raspberries
1/3 of a cup of blackberries
1/4 cup of maple syrup
1 tablespoon of cinnamon
2 teaspoons of lemon juice
1 teaspoon of vanilla

Pre-heat the oven to 350. In a sauce pan, pour water, brown sugar, vanilla, and maple syrup. Bring to a simmer and allow the sugar to dissolve. In a food processor, add the tofutti cream cheese, berries, and sugar. Puree until smooth and well mixed. Add in 1/2 cup of the water and brown sugar mixture. Puree until well mixed. Add in the lemon juice and puree until smooth and well mixed. Taste. The mixture should have a strong berry flavor and be richly sweet. Add more water / brown sugar mixture to make sweeter and more berries for more berry flavor until satisfied. Pour the mixture into the crust and bake in the oven for 30 mins. The edges should begin to pull away from the crust a bit when done. Chill for 3 hours and top if you wish.


Berry Cheesecake Topping

1 cup of water
1/2 cup of brown sugar
1/3 cup of maple syrup
1/3 cup of sugar
1/3 cup of blueberries
1/3 cup of raspberries
1/3 cup of blackberries
1 teaspoon of vegan margarine
1 teaspoon of vanilla
1 teaspoon of cinnamon
1 teaspoon of cloves
1/2 teaspoon of guar gum or arrowroot or cornstarch

On low heat, bring all ingredients to a slight simmer. Stir regularly and let simmer for about 20 mins. The berries may need to be mashed. After simmer for 20 mins the sauce should begin to thicken. Once it tastes to your satisfaction and is your desired consistency, remove from the heat. Let cool for 15 mins. Do not pour on a cheesecake that has not cooled. Once the topping has been poured on the cheesecake, place in the fridge uncovered for several hours, until cool.


I also has some left over cheesecake batter from last week. It was still good to a drizzled it over some of the berries we had for a fruid salad dessert. That night we also had some baked eggplant.



I am sad to see the Orlando Magic struggle but what can you do? Hopefully my week upcoming will have more productive cooking.

Home Alone for the Weekend

After work today, it was dinner for one. I pulled out some soy curls that we got from Cosmo's about a year ago. I had never used them and though I would try my hand tonight. Typically, I do not make real food when I am not cooking for at least two. It generally ends up being what I call "1-player foods", veggie burgers, sandwich, etc. Nothing fancy. It is hard to get motivated to cook for myself. I was motivated today and whipped up a nice dinner, along with another spinach smoothie. It was nice when followed by a chocolate chip cookie!









Jamie took the day off today. She is heading out of town to some sort of wedding. I do not understand the concept or excitement. They seem like too much work for a small tax break. Anyway, she made some really nice wedding gifts for her friend. I have been bugging her to try and sell some of the home-made fabric flowers on her etsy site. She thinks the market is saturated.










Tomorrow is another day at work and Sunday is my last hope for the Orlando Magic. Keep your fingers crossed!

Chocolate Chip Cookies!

Chocolate Chip Cookies

  • 2 cups chocolate chips
  • 3/4 cup shortening
  • 1 1/4 cup white sugar
  • 3/4 cup brown sugar
  • 1/4 cup of vegan margarine
  • 2 eggs replacers (either arrowroot or bananas work well)
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tablespoon soy milk
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon cloves

Pre-heat oven to 375 degrees. In a large bowl, mix shortening, both sugars, margarine and whatever you choose to use for an egg replacer. Mix until all sugar is folded in and all shortening and margarine is evenly spread. Add all other ingredients and mix well. Take hunks of dough and form into patties, much like a veggie burger. Place on a non-stick baking sheet about 3-4 inches apart. Place in the oven for about 10-12 minutes. Once done, it is best to let them cool on the baking sheet for about 5 mins before trying to remove them. Place them on a brown paper bag or wax paper on a cooling rack for fast cooling.


I had high hopes to make some banana bread with my bananas, however, it seems they are yummy all by themselves. I may have to get more...

Honey and a Drink for Tara

It has been a simple week so far. The house is coming together well, I suppose. Lucky for me, I am not in need of a place to live. I saw Star Trek this week. It was mediocre. Some major irks but overall entertaining.

I also made some nice food this past week. First off I want to show support for Tara - The Snowy Vegan. I made a spinach smoothie. It was yummy. It does have honey in it.
My thoughts on honey: I think big business honey is a major issue with regards to the bee industry. Millions of bees are killed for the grocery store honey. However, since extracting honey does not actually damage the bees, local honey is a different issue for me. If I am confident that the bees are not killed after each season and are allowed be wild, I do not see a huge issue with eating honey. On that note, when Jamie and I were in Florida, we found a little honey stand on the side of the road, with about 10 small jugs for sale. We picked one up. Disagree if you would like but I think that in a more primitive world, humans are scavengers and are likely to occasionally eat things like honey. Your thoughts? (now watch my subscribers drop off like bees in the corporate machine!)I also made a quinoa pilaf with some shredded cabbage and carrots. It was light and refreshing. I generally cook heavy foods and this was such a treat. It always surprises me how well I feel after eating something as health as this dish.
We also made some Mac & Cheese.
