More Rhubarb!

More rhubarb fun!  This is like having pie without the hassle of that pesky crust to get in the way of the good stuff.  I like the addition of the sugar as it add a thickness to the texture.



 Strawberry Rhubarb Smoothie

1 banana
1 stalk of rhubarb
8 med - large strawberries
2 cups of apple juice
1 tablespoon of agave nectar
1 tablespoon of sugar

Combine all items in a blender.  Puree until smooth and the sugar has melted into the liquid.  Using frozen fruits will make the drink cold, otherwise, chill for at least 30 minutes prior to serving.  If the smoothie is chilled, an additional trip around the blender may be required due to settling.

That reminds me of my childhood when we used to steal raw rhubarb stalks from my uncle's garden and eat them with sugar. Awesome!

This looks pretty, I've never thought of using rhubarb in my smoothie!
