Since Ashley has been gluten free we have avoided this dish but took the opportunity to make it when she was gone.<br />

Kaleigh likes her nuggets with a buffalo sauce where as I am a BBQ kinda guy. They came out great and it was a great meal that we had been missing. When Kaleigh was that we were having them she got super excited!<br />

One of the first things I made was my seitan jerky. For the holidays Ashley got a really nice dehydrator. I pulled that beast out and made some jerky! It was fantastic! In the past I had used the oven but nothing compares to the dehydrator! The results were night and day. After picking up everything we needed for the fizzy burping drink we set out to make it. Half a dozen kiwi's, a lime, a can of cream soda, some lemon-aid, and raspberry soy yogurt, tossed in the blender and we were done. It was not the most appetizing thing and honestly it tasted about as good as it sounds. The solution? new wave Bar B Que tofu! I made a great chipolte Bar B Que sauce, breaded and fried, then baked triangles of tofu and the girls loved them! I still got my Bar B Que tofu and they did not have to groan about another night the same old dish! We had her birthday party at her karate dojo and it was a huge turn out. Last year we let Kaleigh invite 15 friends, thinking about 10 would come and (aside from family) only 2 came. Ashley and I felt awful so this year I gave her 40 invitations and hoped to get about 10-12. That number ballooned up and nearly 25 kids were at her party!<br />
<br />
It was a lot of folks but she had a blast and I think most of the kids did as well. They got to break boards, throw ninja starts, play dodge ball, eat cake, open gifts, ect. It was great to see Kaleigh have so much fun!<br />
<br />
As she requested, I made Kaleigh a triple layer chocolate cake, with chocolate icing, chocolate sprinkles, and chocolate ganache on top. Sadly, every picture I took of the cake was either blurry or too dark. I did however also make a dozen cupcakes since there were going to be so many kids. They were vanilla cupcakes with purple and white vanilla swirl icing.<br />

After Kaleigh's party we drove to Portland so we could eat at Silly's and get vegan milkshakes! We all had a great day. I feel fortunate to be in Kaleigh's life, she is a great kid with a great mom to boot! Kaleigh thought it was decent, Ashley thought it was not great and I felt like it was under seasoned but the texture was cool. I think we should have cooked it a bit longer and added more black salt but I enjoyed it. They were definitely a little on the powdery side but that may have been operator error. <br />

For no good reason, I rarely cook with eggplant but I do enjoy it. Ashley is also a very good cook but does not make many home cooked meals anymore so I jumped at the chance to take the night off in the kitchen and let her create!<br />

The results were outstanding! She made some of the best breaded (gluten-free) eggplant I have ever had. It was incredible. It was breaded with corn chips and spices then deep fried and topped with a homemade tomato sauce. We had some broccoli and pasta salad on the side as well.<br />

My most recent attempt was a smokey corn chowder. The girls, both being southern born, do not quite understand what is so comforting but they humor me and Kaleigh actually really enjoyed this sweet, smokey soup. I posted over 150 times which was the most since 2011! It feels good to be back in a healthier mindset and motivated to write, cook, experience, and share. In 2015 Ashley and I launched a new business, <a href="https://www.facebook.com/Squashed-624583034339944/">Squashed</a>, which has been doing really well, Kaleigh started karate which she loves, Ashley got a new vehicle, we started doing shows at our house, and we grew lots of food.<br />

It was a great year and I am confident we will have an even better 2016! For a holiday gift, we converted Kaleigh's old unused playroom into a small in home Karate dojo. We video taped her seeing it for the first time and thought it was worth a share.<br />

This last week, Kaleigh earned her 4th new belt this year! We have been attending karate nearly 5 times a week for the past 12 months and each day she is itching to go again. We are so excited she found something that she loves so much.<br />

Ashley, Kaleigh and I spent most of the weekend making holiday presents and I also had quite a few orders to fill over the weekend. Not to mention that I agreed to bake cupcakes and bitty mints for Kaleigh's school party.<br />

We got nearly everything completed though. It was a productive weekend for sure. The girls both leave for Georgia on Christmas day but we are doing some festivities at my mum's house on the eve and my dad's after they return. <br />

We pan fried both sides and then began to mash it apart into the "pulled" style. It took a few minutes for the jackfruit to soften up and begin to come apart but when it did, it looked pretty cool!</div>

We fried in some onions and added the sauce, toasted some hoogies and we were ready for dinner! We sat down, excited but curious to find that these pulled "pork" sandwiches were outstanding!</div>

We had Sticker Incentive open up the show. They are a local part time ska band that has played our space once before. They are nice guys and their music is upbeat and poppy. <br />

Last was Survay Says, a ska band out of New Jersey. They play an upbeat ska punk sound with a ton of energy. Nick from Stokin' the Neighbors really wanted to have me get Survay Says to come up so I tried my best to get them here and it worked out. The crowd was really excited about them and they played a great set. They were really nice guys and hung out for a meal after the show. Ill try to get them back up on their Spring tour!<br />

It was a great first year for us doing shows at the house. Not only is it a needed outlet for me to have access to these shows but it feels great to be able to provide this type of music for Maine folks. To see everyone having so much fun dancing and shouting and bobbing their head really makes all the work worth it for me. In the past few months, as the weather has gotten colder, it has become out best selling dish. Typically I make it fairly mild in temperature but I had a special request for some heat on this particular order.<br />

I have found that using jalapeno peppers (which i generally add to chili) does not give much heat. It offers a small taste but mostly just a nutty pepper flavor. For this special order, I used chipotle pepper. The heat was escalated a noticeable degree and referred to as Inferno!<br />

I made some cranberries, which are one of my favorite things to have this time of the year. I love the tartness of freshly made cranberry sauce!<br />

We had some awesome apple pie for desert which was great considering I was unable to eat any pie on Thanksgiving day. The only pie crust that was vegan was the mincemeat pie. Irony.<br />

We brought our own vegan turkey option, as well as some store bought stuffing that was vegan. Ashley made a cool carrot and sweet potato casserole topped with an oat crumble. I made some corn bread muffins, 12 with jalapeno and 12 without. <br />

We had a good time and saw a lot of family. I think it was good that it was Ashley and Kaleigh's 2nd time at my grandmothers for thanksgiving because they knew more people and felt more conformable. It got set on a shelf and forgotten until recently. This weekend she wanted to try and make some homemade tofu. It is something that I have never done so we pulled out the kit and began to follow the instructions.<br />

Unfortunately, it was not long before what we were working with no longer resembled the instructions. We began to wing it. By the end we had several blocks of soy product that looked similar to tofu but tasted awful.<br />

We still have an awesome kit and loads of soybeans and will look up some other recipes and try again as Kaleigh was heartbroken that 2 days worth of work did not come to fruition. <br />
