My first day of my recent vacation was a simple at home day. I had some errands to complete prior to my trip to Spain and Ashley and her daughter Kaleigh came over for dinner. It was a relaxing day that did not at all seem like a waiting game for my up-coming trip.
For dinner, I made some pasta with some super cute mini bow-tie noodles Ashley and I found. It was a great dish, somewhere between pasta salad and a heartier dish. It had a nice flavor and I had some left over to take on the trip with me the following day.
As a child, I remember one of my best kitchen experiences was making home-made potato chip with my dad. I thought it would be fun for Kaleigh to have that experience too. She thought it was pretty cool but she might have been a little young for it to hold her attention well. She did eat them up though!
After dinner, Ashley wanted to make some sweets. Who am I to object? She wanted to make my S'mores Cookies. Kaleigh had the idea that she wanted to use some food coloring. We ended up with some suspect looking, wonderfully tasting cookies.
This was a great start to a great vacation. It is nice to be able to surround myself with people that I care about and care about me before leaving them for new experiences.

While on your trip did you polish up your Espanol? I hope you truly had fun...the food is making me hungry.
