Chic Pea and Red Pepper Soup

It has been awhile since I have posted a recipe so you thought I would drop this gem on the blogworld.  I made this the other night when Ashley and Kaleigh came for dinner.  It was really good, even the 5 year old liked it!

Chic Pea and Red Pepper Soup

3 cloves of garlic (chopped)
2 tomatoes (chopped)
1 red pepper (chopped in 1/2 inch cubes)
1/2 of an onion (chopped)
2 cups of vegetable broth
2 cups of chic peas
1 tablespoon of oil
1 tablespoon of red wine vinegar
3/4 tablespoon of dill
1/2 tablespoon of salt
1/2 tablespoon of ground black pepper

In a saute pan, heat 1/2 the oil on a low heat.  Lightly fry the garlic, onion, 1 of the chopped tomatoes, 1/2 of the salt and 1/2 of the ground black pepper.  Cook until the onion is translucent and the tomato has releases its liquid (roughly 5-10 minutes).  Add to a blender and puree until smooth.  You may need to add a little of the vegetable broth to get it going.

In a pot, add the remaining oil, remaining tomato, remaining salt, remaining pepper, chic peas, red wine vinegar, dill, and red pepper.  Cook on med temperature until the tomato releases its liquid and the chic peas are tender (roughly 8-12 minutes).  This can be down while also frying the garlic and onion mixture.

Add the vegetable broth to the pot along with the blender contents. and allow to cook on a low heat for about 15-20 minutes.  Do not allow to simmer.
