Good and good for you

My two days off is coming to an end. Sadly, I got nothing accomplished. Well, nothing blog worthy anyway. I got my taxes done, got my emissions test done, registered my car, made a calzone with Ashley and even whipped up a new juice.

Jamie has her art show on Friday night and I am very excited! It is one of those nights that when you look back at the year in December, it will stand out. I really hope to see some familiar faces Friday night.

It seems that every health conscious person seems to have their own way to make a spinach smoothie. However, I hear more and more that people who are not typically vegan or health conscious have been reading my blog and asking questions. This inspires me to make some quick, easy and users friendly recipes for those who may use it.

Spinach Smoothie
1 banana (peeled)
1 kiwi (peeled)
3 cups of apple juice
3 cups of spinach leaves (rinsed)
2 tablespoons of liquid sweetener

In a blender, combine all ingredients and blend on a high speed until the spinach is completely liquefied. The liquid sweeter can be anything from agave nectar, corn syrup, or any number of other options.

I remember being 16 or so in the mid 90's and on the verge on taking my first sip of a drink made primarily of spinach. I was a bit nervous and expected something fairly unpleasant. To my surprise, it was a healthy and sweet drink with a fun color. Who new? This was far from the spinach from a can I stubbornly refused to eat as a child.

It has been said that when one door closes, another opens. I have tried that theory in my home and it does not work but I hope it works in life. Things change. Onward!

I would say you accomplished quite a bit on your days off! That must feel good :-)

I love the colors of green smoothies...sometimes they are bright and vibrant green, and sometimes the color of pond sludge, but it is all beautiful to me!

The smoothie looks great. I think I will make one for Arthur, but will have to call it "Incredible hulk" or a "Green Goblin" smoothie. Hope the art show goes well. Have a wonderful weekend.

P.S. Package will be mailed tomorrow. :)
