Watermelon has always been one of my favorite foods. I can remember it being a treat in the summer to sit on the back deck and eat slices while letting the juice run down my chin. My stepbrother and I would even have seed spitting contests. When I was living in Denver, watermelon became part of the bedtime routine for me. I think this was actually the birth of my bedtime snack. I would sit in bed and eat a massive bucket of watermelon.
Now, I eat it as often as I can and try to come up with creative ways to use it. Recently, I can up with a fun drink. It was refreshing and the flavor combination was nice.
Watermelon Juice
1 pound of watermelon (cubed)
4 fresh mint leaves
1 tablespoon of lemon juice
In a blender, puree all ingredients until smooth. This drink is much better if served very cold. Chill for at least 30 minutes

great idea! i love watermelon in smoothies... no need to add liquid if you got juicy watermelon :) my fave smoothie combo is frozen banana, strawberry, watermelon smoothie <3 i also love watermelon cubes topped with tons of pico de gallo seasoning... omg i need watermelon now!
