Mango Vinaigrette
1/4 cup of mango
1 1/2 tablespoons of oil
1 tablespoon of red wine vinegar
1 teaspoon of sugar
1 teaspoon of salt
Add all ingredients to a blender and puree until smooth.
I poured this over a salad with avocado and fried mango. It was a very summer-y salad. Light and refreshing. Perfect for the coming warm weather.
